Delawie Principal, Mike Asaro, and Senior Associate, Greg McClure, anticipate the restaurant\u2019s completion at the beginning of October 2016.<\/p>\n
The project, led by John Velasquez, President of Spoleto USA, LLC., and Chef Joshua Korn, \u200eCEO of \u200eCulimetrics, LLC, a restaurant and hospitality consulting group, developed this new prototype to combine the speed of fast casual service with a unique preparation experience creating fresh Italian food.<\/p>\n
Focused on spreading Spoleto\u2019s vision of \u201cCulinary Freedom,\u201d Delawie designed a modern 3,200-square-foot interior restaurant concept that allows each guest to engage in creative culinary experiences. An open dining room with visibility to fresh ingredients allows the Spoleto chefs to provide fast, fun and entertaining dining. At the heart of Irvine\u2019s Spoleto location\u2014styled in warm woods with logo art and accents of color throughout\u2014is the exhibition counter, inviting patrons to watch as chefs cook their meals. Spoleto is lauded by the Orange County Register as the \u2018Italian Chipotle\u2019 and is known for its giant six-ounce \u201cPolpette Grande.\u201d<\/p>\n
This modern design allows Spoleto, who is known for their fast pasta preparations and interactive dining platforms, to explode with excitement in this one-of-a-kind dining experience for all guests. The environment reflects the authentic character of the brand with colors and materials inspired by Italian venues with the addition of signature elements like the saut\u00e9 pan chandelier to celebrate the Spoleto lifestyle. The brand\u2019s commitment to the arts, inspired by Italy\u2019s largest arts festival in their namesake city, is evident in the design of the environment through materials, seating, and artful merchandising areas. A 600-square-foot exterior dining patio enables dining guests to enjoy Southern California comfort with Spoleto\u2019s lively spirit.<\/p>\n
